
Chef Kevin Tien Opens Modern Vietnamese Restaurant Moon Rabbit at The Wharf
Kevin Tien and InterContinental Washington D.C. – The Wharf have opened Moon Rabbit, a 50-seat restaurant located at The Wharf in the heart of Washington D.C.
Moon Rabbit brings modern Vietnamese cuisine that evokes memory, honors history, references globally inspired techniques and spotlights reinterpreted takes on regional Vietnamese dishes to the vibrant waterfront dining scene. Nationally celebrated as one of Food & Wine magazine’s 10 “Best New Chefs,” Kevin Tien’s menu is intended to be a love-letter to his heritage as a first generation Asian-American, and to showcase dishes that tell his personal story, through an elevated and innovative lens.
“The experience I’ve gathered up to this point has made me a better leader and a better cook, and to be able to bring that experience to bear in creating a restaurant that celebrates the recipes and dishes I grew up with, and time-honored, Southeast Asian cooking traditions passed on from grandmother to mother, to son—through my own lens, with new, global techniques feels like a ‘full-circle’ experience for me,” said Tien. “I’m grateful to be able to partner with InterContinental to bring food that expresses my unique and complex heritage as an Asian-American, with my distinct perspective, to D.C. and I’m eager to give people a taste of the food that’s so special to me.”
